Good but expensive

I have struggled for some time when cooking dishes with large volumes of ingredients because they filled the casseroles that I was using which meant that it was hard to stir without slopping the contents. It also meant that I had to fry items in batches which extended the cooking time. Buoyed by a need to create a coq au vin for 20 plus people I therefore decided to treat myself to a new large casserole.I have a Le Creuset casserole which has provided over 30 years problem free service so I looked at their range. The largest casserole in a range of colours was 30 cm holding 8.4 litres but then I discovered that there was also a 34cm version only in black which held 12.3 litres and was obviously also taller. The respective costs were around £135 and £205. I didn't want to buy the smaller and then find that I needed a bigger size so I plumped for this 34 cm version.It duly arrived in a large box and on unpacking I realised that when measuring my oven I had forgotten the handles. Luckily it did fit so long as the handles were able to slide between the upright shelf holders. So before you buy one of these remember that the overall width is actually 42.5 cm.My second concerned was that I was surprised to find that whilst all the other Le Creuset casseroles are enamel lined this one is not. It is just cast iron. The technical information on the Amazon web site was correct but I just assumed that it was the same as the others. So far there have been no problems in keeping it clean but I do worry whether this will continue to be true as the years pass. Thanks to the inventor of dishwashers.My only other issue was when using it on the hob. I have an induction hob and it works fine as you would expect of cast iron but I found that the heat did not disperse as much as I was expecting. So whilst frying I was finding that in the centre of the casserole the meat was browning well but around the edges it was more broiling the meat. Indeed if you heat oil on it's own you can clearly see the circle of heat and it is little larger than the size of the `ring'. I have partly resolved this by using it across two rings although that still leaves some areas that are at a lower heat. I was disappointed about this because I have some De Meyer stainless steel pans that seem to disperse the heat much better and I had expected cast iron to out perform this.In summary- A very large casserole.- Make sure it will fit in your oven.- Check the size of your hob rings and how it will fit.- Very expensive, especially since it is not enamelled.

expensive but well worth it

This is a big, beautifully made dish which will cause as much interest from your guests as the contents. This may not say much for my cooking but the casserole will be a useful addition if you cater for 20+ people. PS the Coq au vin was great even if I say so myself !

Great for chili
