4Low and slow but a little high maintenance

I bought the Brinkmann Smoker as I've long been intrigued by the possibility of producing authentic American-style barbecue at home. I tested it out for the first last Saturday and was not disappointed: I whipped me up a batch of real down home style pulled pork that vanished quickly enough to tell me that I was doing something right.The Brinkmann works brilliantly as a standard kettle barbecue as well and can be converted very quickly and easily.Grills burgers, sausages etc well.The product was delivered in a timely fashion, in good condition and matched the description exactly. In short, the Brinkmann smoker produces delicious, tender 'cue but does require a lot of attention and patience (2kg of pork shoulder took about 7hrs to cook). If you're willing to put in the time and are looking for some serious flavour then it is definitely a worthwhile investment.However, the Brinkmann does require constant monitoring and the fire bowl lacks ventilation and is difficult to access as part of the standard set-up. Luckily, a wealth of simple modifications can be made to remedy these issues and after locating some of these on the internet I'm fixin' to smoke up a brisket this weekend.

3needs some modifications

in its standard form this gadget does not keep a decent cooking temperature.due to lack of air in charcoal bowl it soon fills up with ash and is difficult to get to while food is cooking,I am in the process of modifying mine putting a grate in the bowl and drilling air holes in the base fitting the same with weber parts.to control air flow.it requires continual attention, the water soon boils away and it eats charcoal faster than the flying scotsman.I looked at the webber smokey mountain first but at the price too much for me albeit a far better quality.however the food produced with patience, is very tasty.I am going to make a steel chute to add hot coals throgh the little door this should be a helpboiling water can be poured from the topthe instructions in the booklet are inadequate

4Brinkman smoker

New to food smoking - we did get on with the product very well with our first hot smoking. I, admittedly, did research and reading before setting fire to the bowl of wood - having first bought half a dozen smoking and curing books, but firing the smoker went almost smoothly along with what I anticipated from my reading. It worked. While the pork was cooking on the lower grill, we did vegetables on the top with a small tortilla for tapas. So yes we were happy, and I am now not entirely convinced that it was necessary to do all that reading - the brief manual is probably enough. The food was flavourful and moist, and the cooking was fun. We are playing with the idea of smoking the christmas goose in it at christmas. However, an 8-10 hour smoke, and the ambient temperature very different to a warm (possibly the only warm) day in May, with 6 hungry guests, I might just reconsider.Two slight comments: Putting it together is a pfaff, and it arrived short of a couple nuts and bolts. So do have some spares on hand. And the construction is flimsier than it looks in the pictures - I was picturing the quality of our Weber Kettle - its not. But then its not Weber cost, either. The manual says a bowl of wood will last 5-6 hours - it doesn't. It needs a lot of monitoring: the wood needs regular tending, and the bowl of water refilling (we used a watering can) - but that is part of the fun. So enjoy it.
